Meet the chefs (and GM) of The Coopers Tavern

The Wisconsin State Journal has a regular feature called “Meet the Chef,” which gives a brief profile of a Madison-area culinary professional, along with a cooking tip or two and a recipe from him/her. They’ve been running it long enough and often enough that they don’t just feature executive chefs anymore. Yesterday, the spotlight fell on Zachary Glasz Albertsen, sous chef at Coopers Tavern who’s been with them since they opened. (Was it really just 2½ years ago? It’s seems like they’ve been an essential anchor on that side of the square for much longer!) Check out his profile here.
