Roast on State slated to open next month

Samara Kalk Derby recently reported for the Wisconsin State Journal that a new local sandwich shop—to be called Roast on State—will be moving into the former Buffalo Wild Wings location on Madison’s State Street.

“We’re going to do the whole farm to table,” [co-owner Henry] Aschauer said, “but specifically cater to people who are looking for a quicker meal. So that’s where the sandwiches come in.”

Roast will have a scratch kitchen, with everything roasted on premises. The men intend to use locally sourced produce, meats and cheeses when possible. They plan to get most of their bread from Madison Sourdough.
